INTRODUCTION:- Antioxidants are the substances that have potential to inhibit the oxidation of other molecules. Simply the name “antioxidant” also indicates their major function in the body to combat with the damaging effects of physiological phenomenon of oxidation in the cell. These oxidative reactions are going on in every cell and sometime lead to the formation of highly reactive free radical species in the cell which brings harms to cells. A potentially active antioxidant performs their role by removing these free radicals thus preventing cells from damaging effects of oxidation (Sies Helmut, 1997). Extensive epidemiological studies have proved that the risk of chronic disease is less among the populations and communities where main source of diet are green vegetables and fruits (Oomah and Mazza, 2000; Ruxton et al., 2006). Significant effect of diet regarding our health is associated with chemical compounds which are present in the diet. Phytochemicals with beneficial effects on health such as phenolic antioxidants, vitamins, mineral, fibres, are revealed to be present in diet (Konczak et al., 2010; Krishnaiah et al., 2011). Fruits and vegetables are the major source of antioxidants which include phenolic compounds, carotenoids, anthocyanine and tocopherols (Naczk and Shahidi, 2006). Root tubers, fruits, seed grains and herbs among other typical and traditional vegetables have been the source of food for many centuries of people’s inhabitant in Peru. All these plant species are known to carry high nutritional value (NRC, 1989; De La Cruz et al., 2007). Antioxidants are obtained by consumption of certain foods such as fresh fruits, green leafy vegetables. Beside, nuts and grains also contribute a valuable source of these antioxidants.
