Introduction (fenugreek):
Fenugreek -Trigonella foenum-graecum is a plant in the family fabaceae. The plant has small round leaves, and is cultivated worldwide as a semi-arid crop. It is used as common ingredient in dishes from the Indian subcontinent. It is one of the oldest medicinal plants and is native to Northern Africa, southeastern Europe, and Western Asia, but it is widely cultivated in other parts of the world. It is commonly known as fenugreek. Fenugreek seeds are having bitter taste and pungent aroma, which is similar to celery. The seeds of the plant contain many active compounds such as iron, phosphates, vitamin A, B, C, saponins, flavonoids, alkaloids and amino acids.
