Extrusion Processing The preparation of rice paste at 30% (wet basis) in Kenwood mixer was performed by adding water at 40O C to flour. The mixture was mixed slowly at low speed for 25 minute and incubated at ambient temperature for 6 hour. Analytical Method Rice flour was analyzed for moisture, ash, protein and lipid according to standard AACC method. Sensory Evaluation The preference taste was carried out using 9 point hedonic scale with 15 panelists. Cooking quality was determined was visual determination. The catgory of cooking quality were retention of shape, non-sticking and tensile. Statistical Analysis All experiment in extrusion processing were carried out in replicate.
