Bread is an artisanal product with a long history: human beings have been producing it since ten thousand years ago. Even though time passed by and technology has advanced, the way of making bread has remained unchanged: wheat, water, salt and oven. In Europe, bread is the base of life, as well as an important part of history. Until today, Italians still make bread in the traditional way, as a way to preserve their tradition. Bakeries selling breads, pizzas and pastries can be seen everywhere. These bakeries are very different from the bakeries in China. Among them, Matteo’s La Boulangeries MP is the most unique one. Chinese bakeries sell breads and pastries as dessert or street food, but Italian bakeries sell breads and pizzas main dishes. The difference between Chinese bakeries and Italian bakeries is caused by the different needs of their customers. Chinese people aren’t used to eat bread as a main dish and would still prefer rice or noodles. So they treat bread as an optional choice, something to eat when they occasionally want to try a new taste or when they are hungry between meals. As a result, Chinese bakeries mainly sell bread filled with other ingredients such as tuna sauce or other creams, along with other small cookies or egg tarts, so that customers could buy them for a quick breakfast or afternoon snacks. In the contrary, breads are a part of the Italians’ lives. Their relationship with bread is just like Chinese’s relationship with rice and noodles. La Boulangerie MP locates at the historical center, and the locals living around the area are mostly rich people. Normally, when a new local customer comes in, he or she would ask about the kinds of bread we sell, and the ingredients we use, but seldomly ask about the price. Compared to the price, what they care about more is their health. They would prefer breads and pizzas made from organic and slow food ingredients. On the other hand, tourists look for authentic Italian cuisine. Most often, they would ask for either pizza rossa, or Panini made by pizza Bianca and local produced mozzarella, hams, tomatoes and salad. In their eyes, these are the most “Italian” foods in our
