Cold Chain Assignment(Sliced Turkey) Summary Sliced Turkey is a deli-style turkey produced from formed turkey breast meat. This product contains thinly sliced deli meat in a shingle layered vacuum package. The item is shipped ,chilled in cases containing eight 5-pound packages on arrival at the market place and chilled. However a strict temperature control of the harvest-to-delivery process is the most important parameter to control. This assignment describes the steps involved in the the production and transfer of sliced turkey produced in Copenhagen destined to a supermarket chain based in Chicago. The different temperature control monitoring procedures during and post transport will be discoursed as well. The complexity of global meat supply chain, with frequently long distribution chains associated with transportation of the product from one to another country and from one to another continent, makes the solutions for the chilling and freezing regimes, as well as monitoring of time-temperature profiles, very important for the overall success in delivery of product which will be accepted by consumer for its freshness and safety levels.
