Cooking oil is plant, animal or synthetic fat used in frying, baking, and other types of cooking. It is also used in food preparation and flavoring not involving heat, such as salad dressing and bread dips, and in this sense might be more accurately termed Edible oil.
There are a wide variety of cooking oil from plant sources such as olive oil,palm oil ,soyabean oil, canola oil, corn oil, and other vegetable oil.
Types of oil or fat commonly used are:
1. Almond: Almond oil is a species of tree native to the Middle East, the Indian Subcontinent and North Africa. World production of almond was 2.9 million tonnes in 2013, with United States largest as the largest producer of 1.8 million tonnes.

Determination of Specific Gravity:
Principle: The ratio of the weight in air of a given volume of the oil at 30oC to the weight in air of an equal volume of water at 30oC.
Procedure:
a) Clean the specific gravity bottle with acetone and dry.
b) Weight the empty bottle.
c) Fill the bottle with oil in such a manner to prevent the entrapment of air bubbles.
d) Now weigh the bottle with oil.
e) Remove oil, wash and dry the bottle.
f) Fill with water at same temperature and weigh.
