Living in a new place can be a tough thing. One of the hardest things in my life is to move along from my home country to study in Vietnam because I have to adapt myself to the new environment. After nearly two years of being in Vietnam I have found out that the unique of Vietnamese culture, friendly people, beautiful and attractive places make Vietnam charming and unique. But if you asked me what do I like most in Vietnam, undoubtedly my answer would be the food. Vietnamese food is well-known all over the world. It is influenced from both east and Southeast Asian, as well as French cuisine, Vietnam truly has an international food culture, capable of pleasing all kinds of palates. The delicious of the food comes from the freshness of the ingredients!. So it is crucial to ensure that each ingredient is still fresh. Moreover, the food is rich in the use of fresh vegetables, herbs, spices and aromatics for the favor. It is said that the best and most distinguishing features of Vietnamese food is the delicate, flavorful, colorful fresh herbs known, as a whole, as rau thơm. For example, in order to make a delicious fresh spring roll (gỏi cuốn) you just to find the freshest thing you can imagine: a jumble of crunchy raw vegetables, soft, aromatic leaves and cool, squidgy noodles, all stuffed snugly into a feather-light rice wrapper. Secondly, Vietnamese food is not just delicious, but it is also really healthy!. As I have mentioned above, the main ingredients are usually fresh vegetables so those of Vietnamese food are low in fat, gluten-free and plenty of vitamins and minerals. Chen explained to me that the chefs do not speak English very well, so she speaks Vietnamese to them. As she was talking to her co-workers, I looked around to see what the kitchen is like. The kitchen appeared to be small and most of the counters and cabinets seem to be made out of medal. Visiting around Little Saigon, I easily found out that the heart of Little Saigon is located on Bolsa Avenue between Westminster Boulevard and Magnolia Avenue. This is a famous tourist attraction that most Vietnamese people must visit when they travel to California. It is not difficult at all to try Vietnamese traditional cuisines since both sides of the street are packed with restaurants that serve typically traditional foods such as Pho, Egg Rolls, Banh Mi, etc. Furthermore, Vietnamese people also get access to other services such as bank, health care centers, shops, entertainments, legal-aid services and many other services at ease. The Vietnamese names of cities, towns and streets were changed to French names. Significant business tended to be conducted in French, rather than local languages. If not for the climate and people, some parts of Hanoi and Saigon could have been mistaken for parts of Paris, rather than a Southeast Asian capital. In the late nineteenth century, Vietnam fell into the hands of the French who colonized to fuel their industrialization and improve their economy, becoming part of French Indochina which included Laos and Cambodia. Instead of accepting French rule, the Vietnamese resisted. Under the leadership of Ho Chi Minh, the Viet Minh was established and rebelled against the French. French rule impacted Vietnam greatly, and the effects of their control can still be seen to this day. Profit was the driving factor that led to France’s rule over Vietnam; using the mistreatment of their Catholic missionaries as an excuse, France took control of Vietnam in 1862.

Japanese foods had developed over the past 2,000 years ago with strong influences from both China and Korea. However, only in the last 300-400 years, all the influences come together to make up today’s Japanese cuisine. Rice was among the major influences that introduced from Korea around 400 B.C and within a hundred years it had become the staple food in Japan (Takeda, 2014). During Yayoi period, the migrating tribes from Korea that settled in Japan passed on their techniques for rice cultivation to the Japanese. Soybeans and wheat which had become an essential part of Japanese cooking were introduced from China soon after rice.
What is Processed Food? The term ‘processed food’ applies to any food that has been changed from its natural state in some way, either for safety reasons or convenience. Some foods need processing to make them safe, such as milk, which needs to be pasteurized to remove harmful bacteria. Other foods need processing to make them suitable for use, such as pressing seeds to make oil.
Based on my data for my daily intake of foods, I would say that I live a pretty healthy life. I went over the food groups and calories, nutrients, food details and meal summary of my food diary and I thought it was interesting to look at all the little details of the different foods I ate throughout the day for breakfast, lunch, dinner and snacks. If I had to set 5 goals to improve my nutrition in what I eat and how I keep myself healthy I would have to say for the first one, exercise more, the second one choose healthier meal options, third one eat more throughout the day, fourth one choose healthier snacks, and for the last one do not eat when bored. I try to exercise as much as I can when I have free time, but it is sometimes hard to find some free time.
Mainly every shop sign down Valley Boulevard is in English with Chinese writing underneath it. All of the restaurants, banks, stores, gas stations resemble the Asian culture. I also came across Asian food markets and the popular 99 Ranch Store that was mainly filled with Asian workers. I did notice a lot of poverty on the streets of Valley Boulevard. I wasn’t surprised to see dirty buildings and homeless on the streets.
One of the most important ways to stay healthy is to have healthy food and eat them in an appropriate time. Healthy eating is the cornerstone in preventing the health from many conditions, such as diabetes, heart disease, cancer and blood pressure. Junk foods should be avoided as they do not have any nutrients, so no point in eating them. Instead of having these fast and unhealthy foods, the diet should contain leafy vegetables, fresh vegetables, fruits, milk, and fish as these are plenty in nutrients.
