Steps: Put the chicken in a sauce pan and add enough water. Cook on a low heat. Add bay leaf and thyme. Allow to simmer for about 15 to 20 minutes. Ensure it is well cooked before turning off the heat. While the chicken is cooking, prepare the vegetables. Peel the carrots and dice. Peel the onions and dice Place the chicken in a bowl or tray to cool. Separate the chicken from the bones and shred bit by bit. Remove any residuals from the broth if it is cloudy with a strainer.
