Potato Pudding (Alu ka Halwa)

Ingredients
• 1/2 kg potatoes
• 1/2 litre milk Method of Preparation
Boil the potatoes. Peel and mash them. Pour the milk into a pan and boil for three minutes. Stir it. Add the sugar and stir again. Add the potatoes. Add the elaichi powder. Put in a plate, decorate with sliced almonds and serve. Medicinal Properties
It strengthens the body and helps to increase weight. It is rejuvenating and aphrodisiac in nature. It increases fat if taken in excessive quantities. So obese persons should take this in moderation. • Heat butter or ghee; add cumin, cloves, cinnamon, mustard seeds, and fenugreek seeds until the seeds turn dark brown.
• Add this mixture to the buttermilk and chickpea flour mixture. Also add the fenugreek leaves.
• Add the remaining ingredients and heat over medium heat just to boiling point, stirring constantly to avoid overflowing.
• Serve hot.

It is ruchikar (appetizer), deepan (stimulant), pachan (digestive), anuloman (purifier) in nature. It is good for people with Sinusitis and Flatulence. As it is deepan in nature, it is used in indigestion and for treating poor digestive fire.

Dosha Analysis
It pacifies Vata and Kapha Dosha. It increases Pitta Dosha due to its amal rasa. We have added fenugreek seeds and other spices to make it more digestible. Thus, Pitta people should consume this in less quantity.
