Summary
Fruit are major food products and key ingredients in many processed foods. They are a rich source of vital nutrients and constitute an important factor of human nutrition. Consumers present are more aware of the grandness of healthy foods and require food products with high nutritional value along with high standards of sensory characteristics. Thus, the processing has to preserve the nutritional value of the fruit, while also preserving its natural color and flavor.

Color is an important property that indicates ripeness, defects, etc. Currently, sizes and color of many food products are inspected by human vision. However, the adaptation of the human eye to slight changes in color and the effect of the background on the perceived color and color intensity are the major drawbacks of visual inspection. To make decisions consistent, machine vision technology based on image analysis using color has proved to be the best technique to determine quality of fruits.
