In a wider frame, food safety is inextricably linked to the nutritional qualities of food and a broader range of concerns about the properties of unfamiliar foods, the opposite of food risk can be termed as food safety, which is the likelihood of not contracting a disease as a result of consuming a certain food. Food safety can be distinguished from objective and subjective views. Wastewater usage and chemical processes are perceived as risks of food safety despite their contribution to an efficient, low cost agriculture and food security (Michele Veeman, 2000). The primary market oriented vegetable is tomatoes; however, production of vegetables in general is hampered by some post-harvest problems (packaging, stocking and transport) with less being exported. Market gardening is not only practiced in large irrigation schemes but also in small individual vegetable gardens. The latter generate extra income for farmers and this has positive effects on the trade balance. However, tomatoes and okra will be considered for this study.

Tomato (Lycopersicon esculentum) is an important vegetable crop in most parts of the world. In Ouagadougou, it is almost an unavoidable ingredient in the daily diets of every household. It is used in preparing a wide variety of cuisines such as soups, sauces, and other dishes (INSD, 2009). The crop is grown for fresh market and for processing.
