Science, I love this particular word from my childhood. I prefer Science as the study of change; change for the betterment of life. Scientific modification over time by scientists all around the world fascinated me always. My undergraduate period in the field of food science and technology assisted me to extrapolate the inner beauty of this field. As a student of food science and technology, I feel the responsibility to devote myself in resolving food security and food safety issues. I believe that to solve these problems and to improve our lives, we all need to work together. One day in my third-year at university, while reading articles about health and nutritional aspects of processed food, something came up in my mind about my father 's death due to liver cancer. Therefore, the benefits of functional food to overcome health-related issues made me more thoughtful. Since then, I concentrated more on this area. Being a persevering student, my lab experience was quite well-founded. I secured above 75% marks on an average in all of my practical courses. During the last semester, I have worked in different food industries in our country as a part of my industrial placement program. Those experiences helped to develop my ability to handle responsibility and work under pressure. Another internship program at the “Universiti Malaysia Terengganu”, played the vital role to trigger my interest to pursue my career as a researcher. Research work that I accomplished there was "Development of Keropok Lekor focus on Bangladeshi Spices". At the early stage of my research work, I had very little idea about research. Therefore, to enrich my research background, I went through several books, articles, and research papers. With my firm dedication and hard work and as a quick learner, I successfully surmount the obstacles.
I had underestimated how time consuming research could take. I also struggled to find credible sources. It is also important to remember when conducting research one does not stray away from the main idea. Being a UC Merced student I am offered numerous resources and opportunities.
It was self-explanatory at first when determining what was needed, but initially I had issues in finding the articles due to the limited nature of the topic. What were more available were books, and with I looked at the author’s background and what validity they posed to the research being conducted. One of the biggest things I was looking for, was relevancy. It had to be relevant and fit my criteria in terms of what I needed for my research. What seemed to be the easiest part was the outline to help my assignment.
Ever since the technology evolution inspired by the rise of military-industrial complex, the government and private corporations funded millions of research with the goal to improve people’s welfare. With such noble ambition in mind, Eisenhower reminds us in his last speech that intellectual and capitalism should be independent. Research for the purpose of welfare improvement should not be hinder or delay by any other special interest. However, in today food industry, research for health improvement are pushed aside by research for sales enhancement. Funded by corporations who sole interest is to increase their profit, Pollen claims that many “food scientists spend their days designing the future of food- its flavor, texture, and packaging (92).”
In the 2008 documentary Food Inc. Authors Eric Schlosser and Michael Pollan offer insight into the food industry in America, including how food is produced. Revealing to the normal everyday american all the things you don't know about how you get the food that in your figure right now. They reveal that the main thing that drives our current food system, like any big corporation, is cost efficiency. These cost cuts do make food cheaper for americans but it also puts their safety at risk.

What we eat affects not only us, but the animals, and the world. After learning the truth about where and how our meat and food products are prepared and the effects they cause on our bodies, I was shocked and disgusted. As a society, we can make a few small changes that will have a big and healthy impact on the world and how we live. Usually when you think about a cow, you picture a large farm, a red barn and cows eating grass.
In the US, 40% of food produced, or approximately 365 million pounds of food, is wasted each day. Food waste, however, is a problem that extends beyond America, affecting billions of people as a global issue. The overwhelming amounts of food that are being discarded contribute to global warming and climate change, and prevent the massive number of hungry people from being able to eat nourishing meals. Humanity as a whole must be more mindful of the Earth and its health, as we are the source which most directly affect it. Due to the profound environmental impacts of food waste, a reduction in the amount disposed is necessary to create a more sustainable environment, and humans have a responsibility to protect the planet, even if it requires drastic changes to the current food system.

Through this food diary assignment, I have learned that I have a somewhat healthy diet, but it would be good for me to add some more nutritious foods to my diet. Through this analysis, I will discuss the ranges and limits of specific nutrients, and what my average levels were for the two days that I recorded for this assignment. According to my nutrient intake reports, my intake of calories, fiber, and cholesterol were all under or at the target value. The target value of calories is 2000 while my average value was only 1271 calories.
