INTRODUCTION
The World Health Organization states that food hygiene are the conditions and measures necessary to ensure the safety of food from production to consumption. People who handles food should practice good food hygiene especially the night market traders as the food is easily being contaminated if prevention do not take place. Night market is very popular among the Malaysians and this explains the congested traffic whenever the night market is open. Many people shop for their daily essential items, including readily prepared food like the nasi lemak, chicken rice, traditional kuih, fried noodles and other delicacies from the night market at their neighborhoods area.
The night market traders should be aware that they have the tendency to create an outbreak of food poisoning if there is lack in the food hygiene department. Therefore, practicing good food hygiene among the night market traders are crucial as many consumer will be affected if there is any lack in the hygiene department. But in the contrary, many of the night market traders did not follow or practice good food hygiene. For example, some of the chicken rice seller did not bother to wear a glove when touching the roasted chicken to pack in the packaging with the rice.
It is very important to practice good food hygiene to prevent foodborne illness arise from bacteria, virus or fungi and death of consumer. This is based on a case in 2014 at Kuala Terengganu, a five-year-old boy who had died while being
