1.2 Factors that Influence Menu Planning Decision: Planning a Menu is one of the crucial tasks in Food Service industry. Menu planning decision is affected by various factors like food habits of customer, availability of ingredients, Season etc. Menu planning requires a lot of thinking, idea generating as well as brain storming. A business has to consider a lot of things while planning a menu for the customers and have to put emphasis on it so that they can surpass their competitors pricing and menu listing. Without doing a perfect menu product development a food business cannot supersede others. So it has to put emphasis on menu product development planning to keep the business profitable and retain customers. Now, there are various stages of menu product development planning. The stages of menu product development are : Knowing the Customer/Occasion: In the first stage of menu product development the food business has to know what is the purpose of developing the menu product. It has to know what customer or audience the menu product is being developed for. On the other side if the menu is being developed revolving any occasion then business has to keep that occasion’s theme in mind and develop the menu product. Constructing the Recipe: Second step of menu product planning is constructing the recipe of that menu product. In contrast with the first step as business already has decided upon whom or which occasion the menu product is for, now it can easily determine the recipe for it also. Now the authority should test and taste to check whether the recipe has been properly implemented or not. If the results are satisfactory then the business can pass it on for their consumer. But if it’s not up to the mark or completely dissatisfying then the authority must make some relevant changes so that the menu gets up to the mark. A variety of products must be also made considering the customers because taste buds are not same for everyone. Final Menu Presentation: After the trials and error solving of testing then come the final step which is Final Menu Presentation. This is the final step of menu product development planning. In this step the final menu after testing and checking is presented to the customers and according to their order of desired food, the dishes are served for them. If the customer becomes satisfied then he/she will come again and for the business it will generate profit to keep the business cycle going
