Pasta is no longer just a traditional Italian meal, prepared and loved by Italians. Today, pasta has become a universal favorite, with different kinds of pasta and sauces making its rounds in dining tables and restaurants around the world. Some home cooks and aspiring chefs even take the extra step of preparing their own pastas to come up with authentic pasta dishes, that also reflect their personal preferences and palate. While commercially-available pasta can create a decent Italian meal, sometimes the freshly prepared ones boost the authenticity of the dish.
This is exactly what we have adopted in our household- instead of buying packs of commercially-available pasta, what we do is to freshly prepare the dough, and cut the pasta just before cooking. Initially, we borrowed a manual pasta maker from a friend, and downloaded a recipe online just to satisfy our cravings for pasta. The process of kneading the dough, and rolling out the pasta sheets can be quite tiring, and if you are new to this, you will end up with muscle aches that can lasts for a few minute or even hours.
