In the Philippines, pork meat nowadays is the most popular/ most common food that has been eaten. That’s why we came up with this study because we want to know what are the possible bacteria present the meat. And to be fully aware of purchasing the meat. These meat products are usually sold in local or public wet markets. Pork has been implicated as a major source of food-borne illness (EFSA, 2008). Meat in the public wet market may not be well preserved or unhygienic as some products are hanged and/or openly displayed in which consumers can touch and insects can easily access to it and can cause human disease. On the other hand, in the supermarket or local markets it is well preserved and/or displayed properly that the insects cannot easily access. It is properly checked to avoid an illegal meat or hot meat. But not all meat in the Supermarket would be guaranteed the absence of any bacteria because we don't know the process of distribution of it. Some of these products may be contaminated and are still sold in the market. Handling of raw products has been shown to be critical to meat safety. Some bacteria that contaminates the pork meat namely the Escherichia coli, Salmonella spp., Staphylococcus aureus, Listeria monocytogenes, Enterococcus spp, Campylobacter spp and Streptococcus suis (Mor-mur and Yuste, 2010). A microbial examination revealed that the samples had higher total microbes; mean probable numbers of coli forms and E. coli and yeast and moulds. Salmonella found in 32 samples from 21 stalls. Because microbial growth/ contamination occurred during the day samples taken in the afternoon had greater total counts and contained detectable numbers of Salmonella more frequently higher than those taken in the morning.
