Purple sweet potatoes: 1 pound, peeled and cubed 2. Whole milk: 280 ml 3. Packed light brown sugar: 2/3 cup or 140 grams 4. Ground cinnamon: ¼ teaspoon 5. Vanilla extract: ½ teaspoon 6. Salt: a pinch 7. Fresh lime juice: a few drops Preparation: 1. Take water in a saucepan. Add cubes of sweet potatoes and bring to a boil. Once boiled, simmer the sweet potatoes on a low flame for 20 minutes. They should be fork tender. After simmering for 20 minutes, drain the sweet potatoes and let them cool. 2. Pour milk into a blender; add brown sugar, purple sweet potato cubes, cinnamon powder, vanilla extract and a small pinch of salt. 3. Blend it nicely to make a soft puree. Add 2-3 drops of lemon juice. Press the mixture through a mesh strainer, using a rubber spatula. 4. Let the mixture cool completely. 5. Freeze it in an ice cream maker for at least 5 hours.
