Ethos, Pathos and Logos are the parts of rhetoric analysis, they all have different uses. Ethos is when you have the credentials to talk about a specific thing, Logos is the logistics and reason to convince an audience and Pathos appeals to people's emotions. Since Henry is a king he is a warfare expert, he can connect with his men on an emotional level, and he gives them multiple step-by-step processes during the battle to win.
