Introduction to Indian cuisine:-
In a country like India taste of people changes after every few miles like their culture, tradition and language. India has a vast and different food, compared from the other cuisines in the world. The normal Indian meal contains few different tastes- spicy, sweet, salty, bitter and sour. The country is the land of herbs and spices. Few of them are turmeric, cardamoms, cloves, coriander, ginger, ajwain and many more. Most of the Indian dishes are made up of them, before these the herbs and species were used or medical purpose. Common herbs and spices used are cumin seeds, bay leaves, mace, peppercorn and many more.
India has a vast history, which started from of Indus Valley Civilization till British who ruled over India for more than 200 years, but the main Indian cuisine stayed and fused with the new ones. There were ways of cooking in the early times also like baking (putspaka), steaming (svedanam), frying (apakva), grilling (thanduram) and many more. Both underground and above-ground. There came a time when kings from Middle East invaded the country several times and even ruled the country, because of which the food merged. India’s first taste of outside cuisine came, when they met Arabs, Greeks and romans. Arabs introduced coffee in India, which took a new step in the world of food in India. Every invader in the country bought their cuisine and left. But the cuisine remained in India.

I remember as a child being told these absurd stories that had been passed on from generation to generation, Myths if you will. Where there were so realistic and full of detail that I too began to start thinking it could possibly be true, but I didn’t want to put that illusion in my head that it was all true. So I associated them as being nothing more than a fantasy. Now the thing with some of these stories are they can be pretty intense to the point of being traumatized.
Cultural competency: Indians Culture competency is defined as one has the knowledge, the abilities and the skill to deliver care congruent with the patient’s cultural beliefs and practices (Purnell, 2013). As a nurse or a health care provider, increasing ones consciousness of culture diversity improves the possibilities for health care practitioners to provide competent care (Purnell, 2013). Nurses and all health care providers should be aware of other cultures to provide the best care that they can for that individual. Developing a relationship with diverse cultural groups involves good interpersonal skills and the application of knowledge and techniques learned from the physical, biological, and social sciences as well as the humanities (Purnell, 2013).
