Shrimp and Grits She Said: Whoa! I think this may be my favorite dish. At some point of reading the description I completely ignored "andouille gravy" and was so suprised at the andouille forward flavor when tasting the sauce. If you're not a pork eater or a fan of smoked sausage, this is not the dish for you. The grits were creamy, the shrimp were tender and the andouille gravy was smokey without being too dark. I could taste Chef Haigler's South Carolina roots in this dish. A definite winner! Brandon

Somehow I find myself enjoying this greasy, messy, yet satisfying meal; the chance (fatty) bacon strips only increase the appeal of my burger
overpowering like some seafood dishes are. File infuses itself in the sent penetrating your tingling smell receptors. One's nose is offered to explore the earthy scent of the finely ground sassafras in the file. In fully cooked gumbo, strong spices of Andouille sausage combine with piping hot steam to open the nostrils further. Allowing the diner to take in more of the gumbo's unique and glorious smell. Also, without smelling the taste of gumbo can never be fully experienced because the sense of smell enhances
