Foods and food products need to be safe and nutritious as it is essential to human health and well-being. However, food borne diseases are a significant problem . Food borne disease is any illness resulting from the consumptin of contaminated food with disease causing agents present.Therefore to prevent these spoilage of foods from occurring ,it is important to know the organisms that are responsible for food spoilage and the foods that they may spoil.(Barth et al ,2009).
Food can be classified into non -perishable ,semi perishable and perishable goods. Foods that are non perishable such as oats ,are not spoilt under normal conditions. Fruits and vegetables contain a natural protective barrier,however spoilage microorganisms can still be detected on surfaces of fruits and vegetables. These microorganisms are generally are found in the soil. (Saranraj et al,2012). Spoilage microorganisms of fruits and vegetables ,can be introduced to the seed itself or can enter plant tissues during fruit development, either through the calyx or along the stem. However for microorganisms to have successful establishment, it as to overcome multiple protection barriers.(Barth et al ,2009) .
