Celiac Disease
The word celiac is derived from the Greek word koiliakos, which means suffering in the bowels. In the second century AD, Aretaeus of Cappadocia, a Greek physician, discovered Celiac disease. Celiac disease is a common autoimmune disorder that can develop at any point in the life of a person. As reported in the Genetics Home Reference, ‘Its prevalence has been estimated about 1 in 100 people worldwide.’ Celiac disease patient is unable to eat pizza, pasta, cake, and bread. If the patient eats any of these, he or she will suffer from acute pain that cannot be cured only if the patient cuts out that kind of food from his or her diet. Gluten is a kind of protein that contains gliadin, a protein used to make gluten by combining it with glutenins. Gluten is found in the grains of wheat, barley, rye, triticale, and food made from them. In addition, it can be found in some medications, vitamins, and beauty products. People who have celiac disease cannot eat or use anything that contains gluten. Once a celiac patient eats something that contains gluten, the immune system produces antibodies to gluten because it considers gliadin a threatening substance. Unfortunately, there is no medicine for celiac disease. Celiac disease has similar symptoms to other diseases such as lactose intolerance and diverticulitis, so it can be difficult to diagnose; however, Celiac disease can be diagnosed by physical examination, skin biopsy, blood test, and intestinal biopsy. The only treatment for celiac disease is to follow a gluten-free diet. When a celiac patient cuts out anything that contains gluten, he or she will get better, and the symptoms will disappear within days. Also, after six months in children and after years in adults, the villi will heal, so the body will start to absorb nutrients
“Gluten free in Afghanistan” is a fairly new book published in 2012 by Captain Donald Andrasik who served in the Army National Guard. In the book Andrasik shares his story of maintaining a gluten free diet while being overseas fighting at war in Afghanistan. In “Gluten Free Soldier in Afghanistan” by Amy Ratner she breaks down Andrasik’s book and reviews it while expressing her thoughts throughout her article. I didn’t know that people could be allergic to such an important ingredient in a lot of foods. After this happened to me I was really upset that I couldn’t eat certain things anymore but I eventually got over it. I had to start watching out for things that have gluten that you wouldn’t expect them to.
