Food labels are trusted to indicate their nutritional value and content. The Canadian Food Inspection Agency set standards with food production companies to tolerate no more than a 20% error margin. These standards are set to ensure that the nutritional value and content indicated on the label are as close as possible to what they actually contain. In this lab, a Beer-Lambert Law graph of absorbance versus protein concentration is obtained using BSA (bovine serum albumin) standard curve dilutions. This plot is linear only over a limited period of protein solutions and it depends on the protein and method used. The standard curve produced in the Beer-Lambert Law graph can be used to determine the protein concentrations of 2% milk, a protein drink, and soy milk, by knowing their absorbance. This method consists of measuring the absorbance values of 6 standard proteins in this case, and use this information to find the protein concentration of the unknowns. From this, the absorbance of 2% milk, a protein drink, and soy milk are compared with the graph to find their true protein concentrations. Their protein concentrations are important because the Canadian Food Inspection Agency also have other standards regarding the claims a food production company can make towards their products.
