Serves: 1 Preparation time: 5 minutes Cooking time: 5 minutes Ingredients: - ½ cup fresh broccoli, steamed - 2 eggs, lightly whisked - 1 teaspoon olive oil - 1 tablespoon milk - Freshly ground salt and pepper - 2 tablespoons shredded cheddar cheese Directions: 1. Heat oil in a medium skillet over medium-high heat. 2. Add broccoli and cook for 2-3 minutes or until heated through. Combine eggs with milk until well whisked. 3.
